We made our vermouth at Matchbook Distilling in Greenport, right on the shores of the Peconic Bay. It is made using an organic cinsault rose from Oregon. We added a locally made grape eau de vie to fortify it and added local peach leaves, hibiscus, gentian, and other herbs to create its bright floral palate. It’s outstanding on the rocks with a twist, with club soda for a spritz in the afternoon or mixed into your favorite cocktails as the vermouth component of your Manhattan, negroni, or Martini. We suggest trying all three, just not all at once.
